The relationship between carotene concentration and vitamin A activity of carrots for rats.
نویسنده
چکیده
The vitamin A values of plant foodstuffs, as found by biological tests with rats, are often lower than would have been expected from the results of chemical estimations of the carotene content. The causes of this discrepancy presumably lie mainly in a less complete absorption of carotene from vegetables than from the oily solution in which the international /3-carotene standard is administered, and in the inability of the chemical methods, as commonly applied, to discriminate between /3-carotene and isomers of lower biological activity. The present paper is concerned with the experimental evaluation of the ratio between biological and chemical values for carrots.

The Healthy Glow of Carrots
We have probably all heard that carrots are good for our health, particularly for our eye health. This is primarily due to the very high levels of vitamin A and its natural precursor, beta-carotene, in carrots. In fact, a single cup of carrots has been reported to provide over 650% of our daily needs for vitamin A, which is simply amazing. In addition to being rich in vitamin A, carrots are a v...

BACKGROUND: Vitamin A which is found in different tissuesand organs plays a particular role in detecting clinical signs invarious deficiency conditions. However, sometimes the marginaldeficiency is present in a way that clinical signs are not visible butperformance defects, such as infertility is seen. OBJECTIVES: Inthis study, the normal baseline levels of vitamin Aand β-carotene inclinically ...
متن کاملBioconversion Efficiency of β-Carotene from Mango Fruit and Carrots in Vitamin A
Problem statement: Bioconversion efficiency of β-Carotene (BC) in vitamin A is strongly influenced by food matrix. This efficiency has been determined mainly in typical BC sources like carrots. BC content in mango fruit is considerably high however; the bioconversion efficiency of BC from fresh mango in vitamin A has not been determined nor compared with those of typical BC sources. Approach: V...
متن کاملThe Relationship between Antioxidants Consumption and Insulin Resistance/Insulin Sensitivity in Type 2 Diabetes without and with Coronary Stenosis: A Case-Control Study
Background: Type 2 diabetes (T2D) is known as a common chronic metabolic disease worldwide. Coronary artery diseases are one of the hazardous disorders in diabetic patients. The current study aimed to investigate the relationship between dietary antioxidants intake with insulin resistance and insulin sensitivity among T2D without and with coronary stenosis (CS). Methods: This case-control study...
متن کاملThe effect of food preparation on the bioavailability of carotenoids from carrots using intrinsic labelling.
A strategy to reduce the incidence of vitamin A deficiency is to improve precursor bioavailability from meals. Since vitamin A precursors are fat-soluble, we noted that carotenoids are more easily absorbed from food if prepared in such a way that the food matrix containing provitamin A (β-carotene) is sufficiently fat rich. To quantify this effect, we have developed a stable isotope methodology...
